1 Bag of baby carrots
1 Large onion
Cloves of garlic
3-4 Pieces of ginger, chunked
4 Cups of Vegetable Broth or chicken broth
2 TBS Black Pepper Corns
1/2 C Basil Pesto
2 C Shredded Parmesan Cheese
Fresh Basil Leaves for garnish
Steps
Heat the oven to 425
Slice tomatoes in half, dice onion, peel and cut ginger
